Savouring Apothic Dark

Apothic Dark

Apothic Dark is a limited release red wine out of California with an average price–$15.95–for a wine that is full of character and Old World style that has a modern edge.

Named for Apotheca, “where vintners stored their most coveted concoctions in 13th century Europe,” the wine is courtesy of winemaker Debbie Juergenson, who also is credited with Apothic Red and Apothic White.

On tasting Apothic Dark, the first impression is deep and layered, with a range of berry notes, and hints of mocha, and it lingers beautifully as the textures fade away. It’s a wine that could be served with a meal, like a nice steak, but I think I’d recommend it more with a rich, dark chocolate dessert and into an evening of socializing.

The wine is also impressive, however, because it’s remarkably light-finishing for such a dark red wine.

From the vitner, the official release for the wine notes that “the grapes for Apothic Dark were fermented at a maximum of 90° to increase the extraction of dark jammy fruit characteristics.”

Pick up the wine soon as it is very limited and won’t be available for much longer. After sampling the wine though, hopefully we can expect to see a return next fall.
